Ayurvedic cooking
Ayurveda is the science of life.
An ayurvedic practitioner is dedicated to heal and balance the patient’s body holistically. In this 2 hours we will discover the world of chutneys and how to adjust them according to the needs of your body-mind-constitution, which is called dosha.
There are three doshas and in most people there is one or two dominant doshas. The aim of ayurveda is, to balance your body and mind. In cooking, that would be done by looking closely at the doshas and choose ingredients accordingly to enhance harmony.
We will prepare a few chutneys to accompany the main dish and “spice them up” according to Ayurveda, which translates “the science of life”.
Chutneys are very useful to accompany a meal to stimulate agni [digestive fire], reduce ama [toxic waste products] and facilitate digestion. They are a great complement to a tridoshic meal where members of a family have different dietary needs. This way a simple balancing meal can be prepared and then specific dosha regulating chutneys can be added as needed.
An ayurvedic meal has healing qualities, as it doesn’t provoke reactions leading to toxic waste produce. It should contain all six flavours and be multi-coloured, as eating with all senses is part of a healthy diet.
